The Boat House restaurant is featuring an adaptation of the winning dish from the 14th Annual Rhode Island High School Culinary Arts, Foodservice & Hotel Management Competition on its menu through Monday.

The appetizer — Asian Chicken Wonton Cups — was created by students Anthony Morales, Richard Desmarais, Tyler Hartley and Liam McGloin from the Warwick Area Career and Technical Center, whose entry earned first place in the Culinary Arts category. The dish is available at the restaurant, located at 227 Schooner Drive, from Wednesday, March 18 through Monday, March 23.

The dish is light and flavorful, featuring ground chicken, fresh ginger, hoisin and soy sauces, grated Asian pear, green cabbage, julienned carrots and cucumbers, rice noodles and an eggroll wrapper. Executive Chef Marissa Lo worked with the students to modify the recipe, refining both its flavor profile and presentation. Lo is also offering an updated version of the appetizer featuring lettuce cups.

This year’s competition drew top competitors from CHARIHO Tech, Newport Area Career and Technical Center, Warwick Area Career and Technical Center, William M. Davies Jr. Career and Technical High School and Woonsocket Area Career and Technical Center.

The feature is part of an ongoing partnership between Newport Restaurant Group, which owns the Boat House, and the Rhode Island Hospitality Education Foundation. For the past several years, the two organizations have collaborated to bring the competition’s winning dish to one of Newport Restaurant Group’s restaurants across the state.
